  • 1/4 cup butter
  • 1 cup warm milk
  • 1 cup warm half-and-half
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon freshly ground pepper
  • 1/2 teaspoon cayenne
  • 1/4 teaspoon freshly grated nutmeg
  • 1/2 cup grated swiss cheese

  • 1 egg yolk
