Chouriço Gumbo Recipe

Ingredients

  • 4 Portuguese chorizo sausages, removed from casings, chopped coarsely
  • 2 tablespoons canola oil
  • 1/2 a large vidalia onion, diced
  • 1 small green bell pepper, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • cajun seasoning, to taste
  • 2 tablespoons all-purpose flour
  • 4 roma tomatoes, chopped
  • 2 cups chicken stock
  • 2 fresh thyme sprigs, leaves only, chopped
  • 1 dried Turkish Bay Leaf
  • 2 cups sliced okra
  • Hot cooked rice (cooked with butter and salt)
  • chopped fresh parsley (optional)
  • chives or scallions, sliced (optional)
