- 5 strips bacon, cooked and crumbled, reserving 1 tbls. bacon grease
- 1/4 cup onion, finely chopped
- 2 garlic cloves, minced
- 1 10 oz. pkg. frozen chopped spinach, thawed and well drained
- 1 cup ricotta or cottage cheese
- 1/8 tsp. ground nutmeg
- salt and pepper, to taste
- 1 egg, beaten
