Almost Guiltless Lasagna Recipe

Ingredients

  • 1 lb. extra-lean ground beef
  • 2 cloves garlic, minced
  • 1 (16 oz.) can whole tomatoes, chopped
  • 1 ( 16 oz.) can tomato sauce
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • 1/2 tsp. dried thyme
  • fresh ground black pepper to taste
  • 3 C. fat-free or low fat cottage cheese (you can use Ricotta if you like, it is just too salty for me.)
  • 1 egg, beaten
  • 2 Tb. dried parsley
  • 1/2 C. grated parmesan cheese
  • 1 lb. 2% shredded mozzarella cheese
  • 8 long lasagna noodles

My Version Of Lasagna. With A Few Alterations You Can Make This A Richer, Less Slimmed-down Recipe, But This Is What Works For Us.
