Acapulco Omelet Recipe


  • 8 eggs
  • 1-1/2 cups large curd cottage cheese
  • 1/2 cup monterey jack cheese grated
  • 4-ounce can chopped green chilies, drained
  • 4-ounce can sliced black olives
  • 3 medium potatoes
  • 1 onion chopped
  • 2 tablespoons minced fresh parsley
  • salt and pepper to taste
