Creamy Crab Crepe Filling Recipe

  • 1 lb. jumbo lump crab meat (drained and picked over for shells)
  • 4 Tbsp minced shallots
  • 1 sprig fresh rosemary
  • 2 sprigs fresh thyme
  • 2 cloves fresh garlic (crushed)
  • 3 Tbsp butter
  • 3 Tbsp flour
  • 1 c. heavy whipping cream
  • 1/2 c. chicken or vegetable stock
  • 1/2 c. milk
  • 1/2 tsp white pepper
  • 1 oz. dry sherry or dry white wine
  • 1 c. grated gruyere cheese
  • sea salt to taste
  • Chopped fresh parsley for garnish
