Chili Recipe

Ingredients

  • 2 tablespoons vegetable oil
  • 3 pounds ground beef
  • 3 cups chopped yellow onions
  • 1 chopped jalapeno
  • 1 tablespoons chili powder
  • 1 tablespoon chipolte chili powder
  • 1 tablespoon New Mexico chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon ground corriander
  • 2 teaspoons Emeril's Southwest Essence
  • 2 teaspoons cayenne pepper
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon crushed red pepper
  • 1 bay leaf
  • 2 tablespoons minced garlic
  • 4 (12-ounce) bottles dark beer ( I used Shinerbock)
  • 2 (28-ounce) cans whole tomatoes, crushed
  • 2 tablespoons tomato paste
  • 1 tablespoon salt
  • 1 tablespoon plus 1 teaspoon dark brown sugar
  • 1 ounce (1 square) unsweetened chocolate
  • 2 cans of hatch green chilis (4oz cans)
  • 2 cups cooked red kidney beans, drained and rinsed
  • 3 tablespoons apple cider vinegar
  • 1 cup grated Cheddar, for garnish
  • 1 cup finely chopped green onions, for garnish
  • 1/2 cup chopped fresh cilantro leaves, for garnish
  • * If you can't find the other chili powders, then use 3 tablespoons of regular chili powder*
  • If you prefer spicier, up the cayanne to and crushed red pepper.
  • Emeril's Southwest Seasoning:
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 tablespoons paprika
  • 1 teaspoon black pepper
  • 1 tablespoon ground coriander
  • 1 teaspoon cayenne pepper
  • 1 tablespoon garlic powder
  • 1 teaspoon crushed red pepper
  • 1 tablespoon salt
  • 1 tablespoon dried oregano
  • Combine all ingredients thoroughly.
  • Yield: 1/2 cup
