Ingredients
- 2 tablespoons vegetable oil
- 3 pounds ground beef
- 3 cups chopped yellow onions
- 1 chopped jalapeno
- 1 tablespoons chili powder
- 1 tablespoon chipolte chili powder
- 1 tablespoon New Mexico chili powder
- 1 tablespoon ground cumin
- 1 tablespoon ground corriander
- 2 teaspoons Emeril's Southwest Essence
- 2 teaspoons cayenne pepper
- 1 teaspoon ground cinnamon
- 1/4 teaspoon crushed red pepper
- 1 bay leaf
- 2 tablespoons minced garlic
- 4 (12-ounce) bottles dark beer ( I used Shinerbock)
- 2 (28-ounce) cans whole tomatoes, crushed
- 2 tablespoons tomato paste
- 1 tablespoon salt
- 1 tablespoon plus 1 teaspoon dark brown sugar
- 1 ounce (1 square) unsweetened chocolate
- 2 cans of hatch green chilis (4oz cans)
- 2 cups cooked red kidney beans, drained and rinsed
- 3 tablespoons apple cider vinegar
- 1 cup grated Cheddar, for garnish
- 1 cup finely chopped green onions, for garnish
- 1/2 cup chopped fresh cilantro leaves, for garnish
- * If you can't find the other chili powders, then use 3 tablespoons of regular chili powder*
- If you prefer spicier, up the cayanne to and crushed red pepper.
- Emeril's Southwest Seasoning:
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 2 tablespoons paprika
- 1 teaspoon black pepper
- 1 tablespoon ground coriander
- 1 teaspoon cayenne pepper
- 1 tablespoon garlic powder
- 1 teaspoon crushed red pepper
- 1 tablespoon salt
- 1 tablespoon dried oregano
- Combine all ingredients thoroughly.
- Yield: 1/2 cup
