- 8 oz. kielbasa (or your favourite sausage) cut into half circles
- 2 tbsp. olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 tsp. dried thyme
- 1/3 cup all-purpose flour
- 4 medium red potatoes with skin on, chopped in bite-size pieces
- 6 cups low-sodium chicken broth
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 cup milk
- 3 cups of your favourite greens (such as collards or spinach, or can sub with green cabbage), coarsely chopped
- 3 green onions, chopped
- 2 tbsp. fresh parsely, chopped
