- 8 round rice paper wrappers
- 2 to 3 onions, cut into long shreds
- ½ english cucumber, cut into long shreds
- ¼ cup mint leaves
- ¼ cup coriander leaves (cilantro)
- 1 cup baby lettuce or mesclun mix
- salt and pepper
