Rib Roast Dinner - Diabetic Recipe

Ingredients

  • For the Potatoes:
  • 6 large russet potatoes, Scrubbed or 6 large sweet potatoes
  • 1 Tbs. margarine
  • ½ cup diced red bell pepper
  • ½ cup diced green bell pepper
  • 2/3 cup chopped yellow onion
  • 4 Slices Baked ham diced( about 4 ounces )
  • 1 ½ cups shredded reduced-fat colby, Monterey or cheddar cheese, divided
  • 2 Tbs 1% milk
  • 2 Tbs. Fat-free sour cream or light
  • For the Roast:
  • 1 Tbs. Coarsely cracked black pepper
  • 1 2 ¼ -pound Boneless rib roast or Tenderloin
  • ¼ cup fresh flat-leaf parsley
  • 1 Tbs. fresh chives
  • 1 Tbs. fresh tarragon leaves
  • 1 tsp. Dried thyme
