- ½ cup diced red bell pepper
- ½ cup diced green bell pepper
- 2/3 cup chopped yellow onion
- 4 Slices Baked ham diced( about 4 ounces )
- 1 ½ cups shredded reduced-fat colby, Monterey or cheddar cheese, divided
- 2 Tbs 1% milk
- 2 Tbs. Fat-free sour cream or light
- For the Roast:
- 1 Tbs. Coarsely cracked black pepper
- 1 2 ¼ -pound Boneless rib roast or Tenderloin
- ¼ cup fresh flat-leaf parsley
- 1 Tbs. fresh chives
- 1 Tbs. fresh tarragon leaves
- 1 tsp. Dried thyme
