Tequila-lime Marinated Shrimp And Scallops With Lemongrass-scented Coconut Rice Recipe

Ingredients

  • * 1/4 cup fresh lime juice
  • * 1/4 cup tequila
  • * 2 medium garlic cloves, minced
  • * 1/4 cup chives, minced
  • * 2 teaspoons whole cumin
  • * salt and freshly ground black pepper
  • * 1/2 cup olive oil

  • * 2 cups red cargo rice, rinsed and soaked at least 30 minutes in water

  • * 2 T brown sugar
  • * 1/2 tsp salt (adjust later to taste)
  • * 3 stalks lemongrass, dried or fresh

  • * 8 cups water
