Ingredients
- 2 tsp extra-virgin olive oil
- 1/2 small red onion, chopped (about 1/2 cup)
- 2 cloves garlic
- Pinch of salt
- ground black pepper to taste
- 1 15.5 ounce cannellini beans or other white beans (about 1.5cups)
- 1/2 tsp chili powder
- 1/4 cup water
- 2 tbsp fresh basil or rosemary, or thyme or mint (can used dried, too)
- Note- I usually double this recipe
