Two Squash Soup With Cider Cream Recipe

Ingredients

  • 5 tablespoons butter
  • 2 1/2 pounds of butternut and acorn squash, peeled, seeded and diced about 6 cups
  • 1/2 cup chopped leeks or you can use regular onion
  • 1/2 cup chopped peeled carrot
  • 1/2 cup chopped celery
  • 2 small apples, peeled cored and diced
  • 1 1/2 teaspoons dry thyme
  • 1/2 teaspoon sage
  • 5 cups of low sodium free chicken stock of canned
  • 1 1/2 cups apple cider
  • 2/3 cups sour cream
  • Chopped fresh chives or parsley for the top

Description

Really Yummy I Also Put The Soups On And Let Them Simmer For Longer Than They Say! I Added The Cider And Cream Sauce To The Soup It Is Not Shown On Its Own.
