- 1 t. each garlic and shallots, minced
- 2 T. white wine
- 3/4 Cup chicken stock
- 1/4 Sheet gelatin, bloomed in cold water
- For spinach
- 1 Cup spinach, washed and stems removed
- 1 t. each garlic and shallots, minced
- white wine, for deglazing
- 1/4 Cup heavy cream
- For salmon
- 1 8oz. fillet, cleaned and patted dry
- salt and pepper to taste
- oil for Searing
