- 1 pound Greek (or other) pork sausage in 1/2" rings
- 2 onions, diced
- 4 tomatoes, diced OR 32 ounces canned crushed tomatoes
- 1 small head cabbage, chopped
- 2 carrots, peeled and chopped
- 2 cans chicken broth
- 1 pound Greek gigantes lima beans (soak overnight and boil about 40 minutes) OR canned or frozen bean of your choice
- 1 teaspoon black pepper
- 1/2 teaspoon red pepper
- 1 cup kalamata olives, pitted and sliced
