Steak Burgers Two Ways Recipe

Ingredients

  • For Chipotle Burgers
  • 2lbs ground sirloin(or combine with venison, bison, elk, etc)
  • 1T olive oil
  • 1 can chipotle peppers in adobo, chopped(reserve about 2T adobo) {or to taste}
  • 1/2t cumin
  • 4oz monterey jack cheese, shredded
  • salt and fresh ground pepper
  • For 4 Star Burgers
  • 2lbs ground sirloin(or combine with venison, bison, elk, etc)
  • 1T softened butter(or olive oil)
  • 2 cloves garlic, minced
  • 2oz crumbed blue cheese(I use gorgonzola)
  • 2T fresh chives, chopped
  • dash of liquid smoke
  • 2t worcestershire sauce
  • salt and fresh ground pepper
  • For Chipotle Mayo
  • 1 cup mayonnaise
  • 2T reserved adobo
  • 1/2t fresh lime juice
  • 1/2t cumin
  • For Maitre D' Mayo
  • 1 cup mayonnaise
  • 2T softened butter
  • 2T fresh parsley, chopped
  • 1t fresh lemon juice
