Ingredients
- 1 quart clam broth (available at most markets at the fish counter)
- 3 tsp Clam Base (optional)
- 2 cups water Only use if using the clam base
- 3-4 red bliss potatoes, diced
- 1-2 celery ribs, chopped.
- 1 medium onion, chopped
- 2-3 tsp dried thyme
- 3/4 lb haddock, or other white fish
- 1/2 1l. shrimp, peeled, deveined, and sliced in half horizontally
- 1/3 lb. scallops
- 3/4 lb. fresh minced clams
- 1/2 cup white wine
- 1/2 lb. bacon, rendered and removed
- 1 1/2 cups heavy cream
- 1/4-1/2 cup flour (use more if you like chowder thick)
- salt & black pepper to taste
