Ingredients
- 1 small onion,chopped
- 3 cloves garlic, minced
- 1 small red bell pepper, chopped
- 1/2 cup butter, divided
- 1lb total of your choice of seafood(ie shrimp or scallops chopped coarsely(raw, if possible), crab meat(NOT imitation), crawfish, lobster meat, clams, etc)
- 2 jalapeno peppers, seeded and chopped fine
- 1 cup Mexican blend cheese, shredded
- 6 large flour tortillas
- 1 cup half and half or milk
- 2t cornstarch
- about 4oz Queso Blanco (white Mexican melting cheese)
- about 6 oz sour cream
- 1 can Rotel tomatoes, mostly drained
- dash of lemon juice
- salt and pepper
- 1/2t hot sauce or cayenne(if desired)
- 1/2 cup cotija, shredded
- sliced black olives, green onions, fresh cilantro, additional sour cream, sliced jalapenos, etc, for garnish, if desired
