Provencal Pork Recipe

Ingredients

  • 2 tbs olive oil
  • 1/3 cup flour, seasoned lightly with salt and pepper
  • 1 - 1 ½ lbs pork loin
  • 8 oz cherry tomatoes, halved
  • ½ cup sliced shallots
  • 1-2 tbs chopped garlic
  • ½ cup dry vermouth (or white wine)
  • 1 tbs fresh rosemary, chopped
  • 1 tsp dried thyme
  • 1, 15 oz. can of cannellini beans, drained & rinsed
  • 2 tbs capers
  • ½ cup black olives
  • 1 cup low-sodium chicken broth
  • 1 tbs fresh, flat-leaf parsely, chopped or torn
  • 2 cups baby arugula or baby spinach
