Ingredients
- 1 red bell pepper, in small dice
- 1 yellow bell pepper, in small dice
- 1 small zucchini, in small dice
- 2 cups cooked black beans (freshly prepared are best, but canned are fine)
- 1 cup flour
- 1 cup cornmeal
- 1 tablespoon baking powder
- 2 tablespoons brown sugar
- 1/2 cup buttermilk
- 2 eggs, beaten
- 1/2 teaspoon kosher salt, to taste
- 1/4 teaspoon fresh ground black pepper, to taste
- vegetable oil or peanut oil, for frying
