- vegetables below should all be sliced thin and long
- cucumber (1/4 english cucumber)
- Red and green pepper (about 1/2 of each pepper)
- green onion (3 or 4 )
- carrot (1 large carrot)
- avocado (1 peeled and cut into long pieces)
- vermicelli rice noodles, cooked (about 2 cups)
- Fresh cilantro
- 1 cup canned water chestnuts, chopped
- Dipping sauce
- 1/2 cup plum sauce
- 1/4 cup seasoned rice vinegar
- fresh grated ginger 1 tsp
- fresh grated carrot 4 tsp
- fresh cilantro chopped 2 tsp
