Brianna's Empanada With Chimichurri Sauce

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 large onion, chopped
  • 6 cloves garlic, chopped
  • 2 teaspoons chipotle chile powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 2 (4.5-ounce) cans mild chopped green chiles
  • 2 hard-boiled eggs, chopped
  • 3 packages empanada wrappers
  • Canola oil, for frying
  • Chimichurri Sauce, Serena Palumbo's recipe follows

Chimichurri Sauce:

  • 2 lemons
  • 1 bunch fresh cilantro, leaves roughly chopped, about 1 cup
  • 1 bunch fresh parsley, leaves roughly chopped, about 3/4 cup
  • 1 bunch fresh mint, leaves roughly chopped, about 3/4 cup
  • 6 cloves garlic
  • Pinch kosher salt
  • 1/4 teaspoon red pepper flakes, or to taste
  • 1/2 cup light olive oil
