Ingredients

Yellow Corn Pancakes:

  • 1/2 cup yellow cornmeal or blue cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • 2 tablespoons honey
  • 1 large egg, beaten
  • 1 1/2 cups milk
  • 1 tablespoon unsalted butter, melted

BBQ Duck:

  • 3 tablespoons unsalted butter
  • 1 small red onion, finely diced
  • 2 cloves garlic, finely chopped
  • 7 plum tomatoes, coarsely diced
  • 1/4 cup tomato ketchup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons dark brown sugar
  • 1 tablespoon honey
  • 1 teasoon cayenne
  • 1 tablespoon ancho chile powder
  • 1 teaspoon pasilla chile powder
  • 1 tablespoon paprika
  • 1 tablespoon Worcestershire sauce
  • 3 duck legs, skin removed
  • 3 cups duck or chicken stock
  • 2 tablespoons cilantro, coarsely chopped
  • Salt and freshly-ground pepper

Habanero Sauce:

  • 3 cups duck or chicken stock
  • 1/4 cup apple juice
  • 3 tablespoons dark brown sugar
  • 2 star anise
  • 1 cinnamon stick
  • 1 habanero pepper, coarsely chopped
  • 1 tablespoon fennel seeds, toasted
  • Salt and freshly ground pepper
