- 2 tablespoons freshly squeezed lime juice
- 2 tablespoons honey
- 1 to 2 jalapenos, stemmed and seeded
- 1/2 medium red onion, chopped
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1 large cucumber, peeled, seeded and cut crosswise into 1/2 moons
- 1 ripe mango, peeled and diced
- 1/4 cup chiffonade fresh mint leaves
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 cup sugarcane vinegar or champagne vinegar
- 1/3 cup canola oil
- Oil, for brushing
