  • 2 sticks sugarcane, quartered lengthwise to form 8 thin skewers
  • 4 (1-inch) thick slices center cut tuna loin (about 6 to 7 ounces each)
  • 1 cup pineapple juice
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons honey
  • 1 to 2 jalapenos, stemmed and seeded
  • 1/2 medium red onion, chopped
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 large cucumber, peeled, seeded and cut crosswise into 1/2 moons
  • 1 ripe mango, peeled and diced
  • 1/4 cup chiffonade fresh mint leaves
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 cup sugarcane vinegar or champagne vinegar
  • 1/3 cup canola oil
  • Oil, for brushing
