- 1 ripe mango, peeled and diced
- 1/4 cup chiffonade fresh mint leaves
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 cup sugarcane vinegar or champagne vinegar
- 1/3 cup canola oil
- Oil, for brushing
