Ingredients

  • 1/2 cup warm water
  • 1 teaspoon sugar
  • 1 tablespoon dry yeast
  • 1 cup plain yogurt (2 percent or whole milk)
  • 1 cup water
  • 1 tablespoon sea salt
  • 2 cups whole wheat flour
  • 2 1/2 to 3 1/2 cups unbleached all-purpose or hard white flour

Topping:

  • Approximately 2 tablespoons finely chopped shallot
  • Approximately 1 teaspoon salt
  • Water for spritzing
