Ginger-Peach Glazed Ham

Ingredients

For the Ham:

  • 2 1/2cups kosher salt
  • 2 1/2cups packed light brown sugar
  • 2tablespoons juniper berries, crushed
  • 2tablespoons black peppercorns, crushed
  • 1(2-inch) piece ginger, peeled and thinly sliced
  • 4bay leaves
  • 1(8-to-10-pound) skin-on, bone-in fresh ham, shank end (keep cold)

For the Glaze:

  • 1cup peach preserves
  • 1cup packed light brown sugar
  • 1/2cup dijon mustard
  • 3tablespoons raspberry vinegar
  • 2tablespoons ground ginger
  • Kosher salt and freshly ground pepper
