- 2tablespoons black peppercorns, crushed
- 1(2-inch) piece ginger, peeled and thinly sliced
- 4bay leaves
- 1(8-to-10-pound) skin-on, bone-in fresh ham, shank end (keep cold)
For the Glaze:
- 1cup peach preserves
- 1cup packed light brown sugar
- 1/2cup dijon mustard
- 3tablespoons raspberry vinegar
- 2tablespoons ground ginger
- Kosher salt and freshly ground pepper
