Lobster Club With Saffron Mayonnaise, Crispy Serrano Ham And Watercress On Chipotle Brioche

Ingredients

Chipotle Brioche:

  • 1 envelope active dry yeast
  • 2 tablespoons sugar
  • 1 1/4 cups warm whole milk
  • 8 cups all-purpose flour
  • 2 tablespoons kosher salt
  • 2 large eggs
  • 7 large egg yolks
  • 1/4 cup chipotle in adobo puree
  • 3 sticks room unsalted butter, cut into pieces and slightly softened, plus more to rub on top of the loaves

Crispy Serrano Ham:

  • 1/4 cup pure olive oil
  • 8 slices thinly sliced Serrano ham

Lobster Salad:

  • 1/4 cup red wine vinegar
  • 1 large pinch saffron
  • 1 tablespoon honey
  • 1 cup prepared mayonnaise
  • 2 cloves garlic, mashed to a paste
  • 1/2 cup finely diced celery
  • 1/4 cup finely diced red onion
  • Salt and freshly ground black pepper
  • 1 1/2 pounds fresh lobster meat, chopped
  • 2 green onions, thinly sliced
  • 1 tablespoon chopped fresh tarragon
  • Watercress
