Ingredients

  • 1 Tbs. olive oil
  • liquid smoke, optional
  • Kosher salt and freshly ground black pepper
  • 2 lbs. chicken thighs
  • 1/2 cup chopped onion
  • 3 cloves garlic, smashed and chopped
  • 1 red bell pepper, stem and seeds removed and cut into 1/4-inch strips
  • 1/2 lb. smoked sausage or chorizo, cut lengthwise in half, then into 1/4' slices
  • 1 cup uncooked arborio rice
  • 2 tsp. dried oregano
  • 2 tsp. turmeric
  • Pinch saffron, optional
  • 2 cups low sodium chicken broth
  • 1 can (14 1/2 oz.) diced tomatoes
  • 1 cup frozen peas
  • freshly ground black pepper
