North African Chicken Tagine

Ingredients

  • 1 teaspoon saffron threads
  • 1 tablespoon warm water
  • 1 tablespoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cardamom
  • 1 (3 1/2 to 4 pound) roasting chicken, cut into 8 pieces
  • 2 tablespoons olive oil
  • 2 sticks cinnamon
  • 2 bay leaves
  • 1 cup thinly sliced yellow onion
  • 1 tablespoon minced garlic
  • 2 cups chicken stock
  • 1/2 cup golden raisins
  • 1/3 cup rough chopped preserved lemon
  • 1/4 cup rough chopped green olives
  • 1/4 cup toasted almond slivers
  • 1/4 cup chopped fresh mint
