Roasted Fresh Ham with Cider Glaze

Ingredients

Brine:

  • 8 quarts water
  • 2 cups kosher salt
  • 1 cup firmly packed dark brown sugar
  • 4 whole cloves
  • 2 bay leaves
  • 1 tablespoon mustard seeds
  • 1 teaspoon red pepper flakes
  • 1 cinnamon stick
  • 1 (8 to 10-pound) shank end fresh ham, bone-in and skin-on

Rub and Glaze:

  • 1/4 cup extra-virgin olive oil
  • 1/4 cup whole-grain mustard
  • 1 heaping cup fresh flat-leaf parsley leaves
  • 12 fresh sage leaves, chopped
  • 9 large cloves garlic, peeled and chopped
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 4 large Spanish onions, trimmed and cut into 1-inch wedges
  • 1 gallon apple cider
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter, softened
