- 1 cup chicken stock or turkey broth

- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups chicken stock or turkey broth
- 1 teaspoon poultry seasoning

- A few grinds black pepper
- 1 1/2 to 2 pounds turkey breast meat: roasted turkey breast or thick-cut deli turkey
- 4 slices whole grain bread
- 2 tablespoons chopped flat-leaf parsley or chopped chives, for garnish
