  • 1 pound chicken fillets, or the breast cut into 1/2-inch thick strips
  • 1 teaspoon chopped garlic
  • 2 tablespoons olive oil

Sango sauce:

  • Olive oil, for cooking
  • 1 white onion, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cubanella pepper, chopped
  • 2 cloves garlic
  • 4 cups chicken stock
  • 1 green plantain, peeled and chopped
  • 1 cup shelled and toasted peanuts
