Stuffing:

  • 8 ounces salted sardines, rinsed, heads removed and roughly chopped
  • 2 sprigs mint
  • 1/4 cup flour for dusting
  • 1/2 cup breadcrumbs for coating
  • Extra-virgin olive oil for frying
