Ingredients

  1. 1 ounce dried porcini mushrooms
  2. 2 1/2 cups boiling water
  3. 3 cups chicken stock
  4. Salt and freshly ground pepper
  5. 1/4 cup extra-virgin olive oil
  6. 1 small shallot, minced
  7. 1 garlic clove, minced
  8. 1 cup arborio rice (7 ounces)
  9. 1/4 cup dry white wine
  10. 1 small bay leaf
  11. 1 tablespoon unsalted butter
  12. 1 tablespoon mascarpone
  13. 1 cup freshly grated Parmigiano-Reggiano cheese (3 ounces)
  14. 1 pound fresh porcini or cremini mushrooms, thinly sliced
  15. 1 thyme sprig
