  3. 2 teaspoons Dijon mustard
  4. 2 tablespoons walnut oil
  5. 2 tablespoons extra-virgin olive oil
  6. Kosher salt and freshly ground pepper
  7. 2 bunches of watercress (about 14 ounces), thick stems discarded
  8. 1 pound jumbo lump crab, picked over and drained
  9. 2 celery ribs, thinly sliced
  10. 1 Granny Smith apple, cut into 1/2-inch dice
  11. 1/3 cup walnuts, coarsely chopped
