Valrhona Chocolate Mousse

Ingredients

  1. 4 large egg yolks
  2. 1/4 cup plus 1 teaspoon sugar
  3. 1 tablespoon Cognac or other brandy
  4. 1/2 pound bittersweet chocolate, preferably Valrhona, coarsely chopped, plus more for shaving (see Note)
  5. 6 tablespoons unsalted butter, cut into small pieces
  6. Pinch of salt
  7. 1/2 cup heavy cream
  8. 6 apricots, halved, or 3 peaches, quartered lengthwise, for serving
