Skirt Steak with Salsa Verde and Ricotta Salata

Ingredients

MARINATED STEAK

  1. 1/2 cup vegetable oil
  2. 1/4 cup dry red wine
  3. 1/4 cup red wine vinegar
  4. 1 small red onion, minced
  5. 3 garlic cloves, minced
  6. 1 tablespoon tomato paste
  7. 1/2 tablespoon ground cumin
  8. 1 teaspoon freshly ground black pepper
  9. 1/2 teaspoon sweet pimentón de la Vera (smoked Spanish paprika)
  10. 1/2 teaspoon hot pimentón de la Vera
  11. Finely grated zest and juice of 1 lemon
  12. 5 1/2 pounds skirt steak

SALSA VERDE

  1. 1 1/2 cups extra-virgin olive oil
  2. 10 anchovy fillets, minced
  3. 4 medium shallots, minced
  4. 1/4 cup chopped flat-leaf parsley
  5. 2 tablespoons drained capers, chopped
  6. 2 tablespoons minced chives
  7. 1 tablespoon minced tarragon
  8. Salt and freshly ground pepper
  9. 1 cup shredded ricotta salata (1 ounce)
