Wine-Braised Beef and Celery Root Shepherd's Pie
Ingredients
- 3 tablespoons extra-virgin olive oil
- 1 1/2 pounds well-marbled beef chuck, cut into 4 pieces
- Salt and freshly ground pepper
- 4 medium carrots, cut into1/4-inch dice
- 2 medium onions, minced
- 2 tablespoons all-purpose flour
- 2 cups dry red wine
- 1 1/2 cups water
- 1 pound white potatoes, peeled and cut into 1-inch dice
- One 1-pound celery root, peeled and cut into 1-inch dice
- 3/4 cup milk, warmed
- 4 tablespoons unsalted butter
- 1/2 cup coarse, fresh bread crumbs
