Wine-Braised Beef and Celery Root Shepherd's Pie

Ingredients

  1. 3 tablespoons extra-virgin olive oil
  2. 1 1/2 pounds well-marbled beef chuck, cut into 4 pieces
  3. Salt and freshly ground pepper
  4. 4 medium carrots, cut into1/4-inch dice
  5. 2 medium onions, minced
  6. 2 tablespoons all-purpose flour
  7. 2 cups dry red wine
  8. 1 1/2 cups water
  9. 1 pound white potatoes, peeled and cut into 1-inch dice
  10. One 1-pound celery root, peeled and cut into 1-inch dice
  11. 3/4 cup milk, warmed
  12. 4 tablespoons unsalted butter
  13. 1/2 cup coarse, fresh bread crumbs
