Pistachio-Apricot Biryani

Ingredients

  1. 2cups dried apricots (10 ounces), cut into 1-inch pieces
  2. 2 1/2cups basmati rice
  3. 2tablespoons vegetable oil, plus more for frying
  4. 1large red onion, thinly sliced
  5. 1teaspoon saffron threads
  6. 1/2cup milk
  7. 2teaspoons cumin seeds
  8. 3garlic cloves, minced
  9. One 2-inch piece fresh ginger, peeled and finely julienned (1/4 cup)
  10. 2cups plain yogurt
  11. 1/2teaspoon cayenne pepper
  12. 1cup water
  13. 2 1/2cups unsalted shelled pistachios (8 1/2 ounces), 1/2 cup chopped, for garnish
  14. 1tablespoon garam masala
  15. Salt
  16. 4tablespoons unsalted butter, melted
  17. 2serrano chiles, seeded and minced
  18. 1/2cup finely chopped mint
  19. 1/4cup finely chopped cilantro
