Ingredients

  1. 3/4 pound thick-cut bacon
  2. 3 tablespoons sherry vinegar
  3. 1 tablespoon honey mustard
  4. Kosher salt and freshly ground pepper
  5. 1/3 cup extra-virgin olive oil
  6. Two 5-ounce bags prewashed baby spinach
  7. 1 pint grape tomatoes, halved
  8. 3 large scallions, white and tender green parts, thinly sliced lengthwise
  9. 2 large Hass avocados, peeled and sliced into thin wedges
