Asparagus with Poached Eggs and Citrus-Ginger Vinaigrette


  1. 1tablespoon fresh orange juice
  2. 1tablespoon fresh lime juice
  3. 1tablespoon pickled ginger juice (see Note)
  4. 1teaspoon soy sauce
  5. 2teaspoons wasabi powder mixed with 2 teaspoons water
  6. 1small shallot, minced
  7. 1tablespoon extra-virgin olive oil
  8. Salt
  9. 1cup panko (Japanese bread crumbs)
  10. 1pound medium asparagus, trimmed
  11. 2large egg yolks, lightly beaten
  12. 4large eggs, at room temperature
  13. Canola oil, for frying
  14. Radish sprouts, for garnish
