Ingredients

  1. 4 large shiitake mushrooms, stemmed
  2. Vegetable oil cooking spray
  3. Salt and freshly ground pepper
  4. 2 teaspoons sugar
  5. 3 tablespoons low-sodium soy sauce
  6. 2 tablespoons mirin (see Note)
  7. 10 ounces soba noodles (see Note)
  8. 5 cups boiling water
  9. 2 teaspoons instant dashi or 1 tablespoon miso paste (see Note)
  10. 4 ounces firm tofu, cut into 1/2-inch dice
  11. 2 cups baby spinach leaves
  12. 1/4 cup finely shredded daikon
  13. 1 scallion, thinly sliced
  14. 1 sheet nori seaweed, cut into 1/8-inch strips (see Note)
