Creamy Polenta with Tomato-Corn Ragout

Ingredients

  1. 8 cups water
  2. Salt
  3. 1 1/2 cups coarse polenta (not instant)
  4. 1/2 cup mascarpone cheese, plus more for serving
  5. 1/2 cup freshly grated Parmesan cheese (2 ounces)
  6. 2 tablespoons unsalted butter
  7. Freshly ground pepper
  8. 1 tablespoon canola oil
  9. 1 cup finely chopped Vidalia onion
  10. 2 1/2 cups fresh corn kernels (from 4 ears)
  11. 2 tablespoons finely chopped seeded jalapeño
  12. 1 1/2 pounds tomatoes--cored, seeded and coarsely chopped
  13. 1/4 cup coarsely chopped basil
  14. 1/4 cup coarsely chopped mint
  15. 4 thyme sprigs, for garnish
