Ingredients

MEATBALLS

  1. 12ounces leftover roast beef, veal or pork, coarsely chopped
  2. 3tablespoons all-purpose flour
  3. 1teaspoon baking powder
  4. 1teaspoon salt
  5. 1/2cup minced onion
  6. 1/4cup minced celery
  7. 1garlic clove, minced
  8. 1/4teaspoon dried thyme
  9. 1/4teaspoon freshly ground black pepper
  10. 3large eggs, beaten
  11. Vegetable oil, for frying

SAUCE

  1. 1/4cup vegetable oil
  2. 3garlic cloves, minced
  3. 1/2cup minced onion
  4. 1/2teaspoon dried thyme
  5. 1/2teaspoon dried oregano
  6. One 28-ounce can diced tomatoes with their liquid
  7. 1/3cup pitted green olives, coarsely chopped
  8. Salt and freshly ground pepper
