Ingredients

CONFIT

  1. Zest of 1 lemon, cut into 1/8-inch dice, plus 3 tablespoons fresh lemon juice
  2. 3 tablespoons sugar
  3. 2 tablespoons water
  4. 1/2 mango—peeled, pitted and cut into 1/8-inch dice
  5. 1/2 teaspoon chopped lemon thyme

PESTO

  1. 1 1/2 cups basil leaves
  2. 3 tablespoons extra-virgin olive oil
  3. 1 tablespoon freshly grated Parmesan cheese
  4. 1 small garlic clove, chopped
  5. 1/2 tablespoon pine nuts
  6. Salt

OLIVE CREAM

  1. 1/2 cup heavy cream
  2. 3 tablespoons black-olive tapenade
  3. Salt

FISH

  1. 2 tablespoons extra-virgin olive oil
  2. Four 6-ounce Spanish mackerel fillets, with skin
  3. Cayenne pepper
  4. Salt and freshly ground pepper
