Smoky Meat Loaf with Prune Ketchup
Ingredients
- 1tablespoon celery seeds
- 1tablespoon fennel seeds
- 1tablespoon black peppercorns
- 1star anise pod, broken
- 2tablespoons vegetable oil
- 1/4cup minced onion
- 1/4cup minced fennel bulb
- 1small celery rib, minced
- 1garlic clove, minced
- 2tablespoons sweet pimentón de la Vera (smoked Spanish paprika)
- 1pound sliced bacon, coarsely chopped
- 3pounds ground beef chuck
- 3large eggs, beaten
- 1/4cup pure maple syrup
- 1cup fresh pumpernickel bread crumbs
- 1/2cup shelled unsalted pistachios
- 1tablespoon plus 1 teaspoon kosher salt or smoked sea salt
- Prune Ketchup, for serving
