Pan-Roasted Salmon with Savoy Cabbage, Cider and Bacon

Ingredients

  1. 1/2 pound Savoy cabbage, shredded
  2. 1 cup apple cider
  3. 1 vanilla bean, split
  4. 2 slices of bacon, cut into 1/2 -inch dice
  5. 1 cup dry white wine
  6. 2 shallots, thinly sliced
  7. 1 tablespoon white wine vinegar
  8. 8 whole black peppercorns
  9. 2 small tarragon sprigs, leaves removed, stems reserved
  10. 1/2 bay leaf
  11. 1 tablespoon vegetable oil
  12. Two 6-ounce salmon fillets with skin
  13. Salt and freshly ground pepper
  14. 4 1/2 tablespoons cold unsalted butter, cut into pieces
  15. 1 tablespoon minced chives
