Curried Shrimp and Carrot Bouillabaisse

Ingredients

  3. Kosher salt and freshly ground pepper

  5. 1 tablespoon unsalted butter
  6. 1 large shallot, coarsely chopped
  7. 1 large garlic clove, chopped
  8. 1 pound medium carrots, sliced on the diagonal 1/4 inch thick
  9. 2 teaspoons caraway seeds
  10. 2 teaspoons coriander seeds
  11. 2 teaspoons mustard seeds
  12. 1 bay leaf
  13. 1/2 cup dry white wine
  14. 2 cups fresh carrot juice
  15. 1 tablespoon chopped cilantro (optional)
