  11. 2 1/2 cups all-purpose flour
  12. 1 teaspoon baking powder
  13. 1 teaspoon ground cinnamon
  14. 1 teaspoon ground ginger
  15. 1/4 teaspoon salt
  16. 1 stick (4 ounces) unsalted butter
  17. 3/4 cup dark brown sugar
  18. 1 large egg
  19. 2 large egg whites
  20. 1 cup minced mixed dried fruit
  21. Vegetable oil cooking spray
  22. 6 candied orange slices (6 ounces)
  23. 2 tablespoons low-sugar apricot preserves
